How to Freeze and Store Sourdough Bread
Share
Real sourdough does not last forever on the counter, and that is a good thing. Our loaves are organic flour, water and salt, baked for the week you order them. Here is how I keep a loaf tasting right for days, and how I freeze it when I want toast ready whenever I need it.
Room temperature for the first day or two
Keep your loaf at room temperature for 1–2 days. That is when the crust is still crisp and the crumb is at its best. Cut what you need and leave the rest cut-side down on a board, or wrap it lightly so it does not dry out too fast.
If you ordered our Signature Sourdough or another whole loaf, slice only what you will eat soon. Save the rest for freezing.
How to freeze sourdough
For longer storage, slice the loaf all the way through, then freeze it. When you want a fresh slice, toast it straight from frozen. That is the same advice we put on our FAQ and Florida shipping page, and it is what I do at home.
- Let the loaf cool completely if it just arrived.
- Slice the whole loaf so each piece is ready for the toaster.
- Freeze the slices in a freezer bag or container.
- Toast slices straight from frozen. No need to thaw first.
If you prefer a soft slice instead of toast, pull a piece out and let it thaw at room temperature. Toast is still my favorite for frozen sourdough. The crust comes back and the crumb tastes close to fresh.
Sliced loaves make it easy
We also bake Sliced Classic Sourdough and Sliced Multigrain. They come pre-sliced, so they are ready for the freezer and the toaster as soon as they land at your door. Same organic flour, water and salt as the whole loaves. Same schedule: order by Wednesday noon on this site, we bake Thursday, and it arrives Friday across Florida.
Whole loaves like Signature, Multigrain, Olive, Garlic Parmesan and Jalapeño Cheddar are great when you want to cut thick toast for a weekend breakfast. Slice and freeze whatever you will not finish in those first 1–2 days.

Ready when you are
That is the whole idea: bake it fresh, eat some now, freeze the rest, and toast when you want it. Thick slices from a whole Signature loaf are wonderful with butter. Sliced Classic is everyday toast. Multigrain brings the seeds.
