Organic sourdough and Hashimoto

We bake organic sourdough because it is better food for everybody. This is our kitchen, not a special loaf for one person. Real bread, the old way: organic flour, water, salt, and time. No pesticides in the flour.

Why it matters in our house

Catalina has Hashimoto. Organic flour is much better for her. It does not inflame her. That is what we see at our own table, so that is the flour in every loaf we sell.

We love organic. We try to use organic ingredients across the bake. Cheese, olives, fruit, and chocolate are not always available organic, and we will not pretend they are. The flour is the part we will not compromise.

What customers have told us

People have written to say organic flour changed their life, and that they are eating bread again. Some of them mention Hashimoto. Some just say the loaf sits well. We love those notes. They are their stories, not a promise from us. Every body is different, and bread is not medicine.
